Broccoli Cheese Rice Casserole

 

This is a great side dish that even the kids will love


Ingredients
1 small bag of frozen broccoli cuts
1 cup of minute rice
1 cup of water
1/2 stick of butter
1 sm size onion-chopped
2 celery stalks-chopped
1 can of Campbell's Golden Mushroom soup
1 jar Velveeta cheese

 

Preparation Directions
Preheat oven to 350 degrees.
Cook broccoli in pan with 2 Tablespoons of water on medium heat till broccoli is heated through.
While the broccoli is cooking, mix all other ingredients (except the Velveeta cheese) in a bowl and stir till well blended.
Once broccoli is heated then drain.
Place broccoli in the bottom of a casserole dish.
Pour other ingredient mixture over top of broccoli and spread mixture to cover all of broccoli.
Take a spoon and dip out spoon sizes of cheese all over the other ingredient mixture. You can use a butter knife to spread it out so it covers the entire pan.
Place lid on dish and cook for 1 hour.
